LOW Calorie stuffed peppers...

Rice and Cheese stuffed Peppers.....



First I cut two large bell peppers in half and take all the insides out....

Then I cooked some brown rice, I used minute rice or the store brand equivalent and set the rice aside when its finished....


I put my peppers in a pan... This was my first time making these so please do not do what I did... add something in the bottom of the pain like salsa or even tomato sauce.... do not cook them with nothing under them... they turned out ok but we needed to add a lot of salsa to them when they came out and they took a long time to cook through and the bottoms dried out in the process....

In a prep bowl I blended sharp cheddar and Mozzarella just a serving size of each and then added in my cooked rice... it melted the cheese some as I was mixing it all together...

Then I just spooned out the mix into each of the pepper halves and sprinkled a little cheese on top... and there you have...


Here is the calorie break down....each half is only 135 calories as is... add the salsa and it doesn't go up much since salsa is a low calorie food!!! 

Enjoy and if you have better ideas to how this could have gone better let me know... I just kind of went with it... I had no recipe just went in the kitchen and started to cook a little....

Our Girl

Here is our girl, Nora Jane.... she was just one week old when these first few pictures were taken (The red outfit) She is the most beautiful little girl in the whole world both inside and out... She is so sweet and we love her more than anything... 

This one is her at just a week old as well.. she is now a month old already!! crazy I know!! 

This was taken of her at two weeks old! 

I will post more as I get some uploaded but I wanted to post something on here even though I haven't really done any crafts or new recipes since being home with this little bundle of joy! I love her more than anything but I am getting a little excited about getting back to crafting and cooking!!

I did however get out last night and hit some sales of left over Christmas things... I am very excited to say that I have a head start on gifting for 2013!!! So excited I actually got Christmas presents for Christmas 2013 and I have one person done already! I LOVE SALES and I love having all year to slowly buy for people!
